Brett Gallo, owner of Sideburns by The Stache, already had burgers, poutine and cheese curds separately on the menu, so he decided to just put them all together. “We decided to chargrill this burger, add some caramelized onions and melt the cheese curds while the burger is cooking on the grill,” he said. It’s all then topped with fries and gravy.   “The first thing that hits you is the savoriness of the gravy, then the melted cheese hits you next with the chargrilled burger and then the fries just bring it all together,” he said. "What you're going to get is the mushrooms' intense flavors, which also have a meaty feel to them. So, expect a highly delicious flavor, according to Fry. You'll think you're going to eat natural meat, so to speak. A nice drink is also included with this burger combo. The burgers are designed to be served with a beverage at the downtown Long Beach restaurant and distillery, which is renowned for its specialty cocktail menu. Therefore, Simon Haxton, owner and distiller of Portuguese Bend, devised a burger for burger week that had pickles, grilled onions, and pomegranate and chipotle jelly combined with peanut butter. Instead of using cheese, he claimed, "the peanut butter itself gives it a little more layer of umami and richness."  Served with a black Manhattan cocktail brewed with in-house High Rye bourbon and walnut liqueur created from California black walnuts.
